Hubby has been working on becoming healthier for quite a while. The Wii Fit game that we got for our anniversary has helped quite a bit (he's lost over a pound a week - very healthy!) and he's been looking at a new way of eating.


He gave me the book on Sunday, before Mum and I went to the grocery store. It's not a diet, or diet food, by any stretch - it's simply a more healthy (ie: salt/sugar free among other things) way to eat. Certainly something that Mum and I could try and cook!


The staple meat is fish, which is where the unknown part comes in. I've never cooked fish. Being allergic to fish, it just never was something I tried to fix. So - I had to make a quick phone call to Grandaddy and Minnie Mouse in Ohio for advice.


Luckily, Minnie Mouse likes to cook fish and knew the answers to my beginner questions. I think the salmon came out very well. (I haven't tried the catfish yet!)

Mum made homemade salsa (and I made homemade chips) - both entirely salt-free.

I also worked on Butternut Squash Soup (a big hit), Black Bean Soup, mashed sweet potatoes, homemade vegetable stock, wild rice (for the salmon), cucumber and tomato salad with homemade dressing.




I know that cooking from scratch is not difficult, and that people just a couple of generations ago did it all the time, but it's still odd. And not adding salt (to ANYTHING) was very much a change for me.

Also, I'm now even more convinced that it's easier and cheaper to be obeise in America than it is to eat healthy. Do you KNOW what fresh fruits and vegetables cost???? It might be cheaper to redo my entire backyard into a 1/2 acre garden...

I know! It's SO EXPENSIVE to eat healthy... Try visiting the Dekalb Farmer's Market... their fruits and veggies always look good and are decently priced (AND you can get organic for a LOT cheaper!)

You have been quite busy. i can do without salt but sugar is another story.
